GF Caramel No Bake Cookies

Prep & Cook Time: 45 Minutes

Ingredients:
(Bowl 1: Cookie Base) 
- 5 Tbsp Coconut Oil
- 2 Tbsp Creamy Peanut Butter
- 4 Tbsp Maple Syrup
- 4 Tbsp Cocoa Powder
- 1 Tsp Vanilla Extract
- 1 Dash of Salt
- 1 Dash of Cinnamon
- 1 1/2 Cup of Oats 

(Bowl 2: Caramel Topping) 
- 5 Tbsp Creamy Peanut Butter
- 2 Tbsp Coconut Oil
- 2 Tbsp Maple Syrup

Instructions:
All Bowl 1 ingredients (except Oats) placed in medium plastic bowl and put in microwave for 45-60 seconds. Then stir until well blended. Then stir in Oats. Place 9 cupcake liners in cupcakes pan and fill evenly with bowl 1 cookie mix. Smooth out and place in freezer for 10 minutes. 

While it's in the freezer, continue with topping instructions.

Pour bowl 2 ingredients into microwave for 20-30 seconds then take out and stir until well blended. With a large spoon, pour bowl 2 mix evenly over cookies in cupcake pan. Then place back into freezer for ten minutes. After 30 minutes of freezing, place in the refrigerator for another 30 minutes. Then serve. 

Makes:
12 cookies
