- Vegetable Oil, Salt and Pepper (All for frying eggs)
- 8 Eggs
- 1-2 Cans Refried Beans
- 4 Chicken Patties or more
- 1 Cup of Salsa
- 2 cups (about 8 ounces) Shredded Cheese (Mozzarella, Monterrey Jack or Mexi Blend)
Instructions:
Preheat oven to 400 degrees Fahrenheit.
In a medium skillet set over medium-low heat, heat a teaspoon of vegetable oil. Once hot, crack in 4 eggs, sprinkle with salt and pepper, and cover with a lid. Cook for about 3 minutes, until eggs are set, but not fully done, and the yolk is gooey. Flip and cook opposite side for another minute. Then repeat with the remaining 4 eggs.
In an casserole dish, spoon your refried beans and spread across dish evenly. On top of beans, add a layer of chicken, then layer your cooked eggs. Ladle in a generous amount of salsa to completely cover, and finally add shredded cheese on top of it all as the top layer.
Place in the oven until the cheese has completely melted, typically 5-10 minutes. Then serve.
Store leftovers in the fridge covered for up to 48 hours.
